Greek peeled wheat grains are produced from the dehulling of durum wheat and are considered a staple food of the Mediterranean diet. They are recommended for healthy recipes, as they are rich in dietary fiber.
An easily digestible grain, they can be added to salads, incorporated cooked into breakfast meals, combined with nuts and fruits, or used as a nutritious substitute for rice in soups. They are also the main ingredient for kollyva and for the traditional, wholesome dessert prepared in honor of Saint Barbara on December 4th.
